Hello everyone! Who loves ricotta!?And biscotti!? and coffee?! I like to think that these are a healthy snack and low-carb. The biscotti I used were Tutti Gourmet Almond, and I used these because they are a lot lower in carbs and sugar than other biscotti brands.
Yesterday was bittersweet. July 28th 2012 is the date of my mom’s passing as some of you know, and instead of being sad I try to think about all of the good times we had. I also think about how short and sweet life can be. I wanted to share with you this cute midday snack (can even be an evening dessert, or a part of your breakfast). These ricotta-spackled biscotti are my new favorite right now alongside my cup of coffee. And Mo would’ve enjoyed these, too!
