I am nuts for coconuts! There was a special request for a coconut coffee recipe, and this was so exciting to make! Also, so very easy. It took a bunch of tries, but I think you will enjoy this cup of coconut joe.
At first I tried to make my own simple syrup with coconut flakes infused. It tasted too mild, I personally didn’t like it. Fail. Plus, there was a ton of sugar in it of course, and no one wants a lot of sugar. Lastly, it took up time! I want easy, don’t you??
Equipment you need: Your regular coffee maker. A french press or your simple coffee-mate.
Note: there is coconut extract used in this recipe. There is alcohol in any cooking extract from your grocery store. A lot of people know this, and a lot don’t. Please don’t use an excessive amount (such as the whole container) :-D. The amount used usually for cooking and for this recipe is not enough to have an effect you. It is safe and delicious for this recipe.
What You Need:
For the coffee brew:
- Coffee Maker
- Separate bowl
- Frother if you have one, if not then a spoon.
- Separate cup to heat coconut milk
- Coffee Grounds, I ended up making 5 cups of coffee. Use your normal amount if you want. There are directions for your coffee brand on the side if you really don’t know how much for each cup to use.
- 1/2 tsp – 3/4 tsp Coconut Extract for this batch 5 cups of coffee.
- sprinkle add ins optional, cocoa powder, cinnamon
- please start with less extract if you are going to make less.
- 1/4 cup Coconut flakes, sweetened (the ones not toasted gives a sweeter flavor)
- Water
For the topping:
- 1/2 cup Regular Coconut Milk, Original or flavored
- Coconut whipped cream
- Cinnamon
- Cute stencil for you to sprinkle cinnamon over.
How to:
- Add water to your coffee machine unless you don’t have to.
- Place desired amount of coffee grounds in a bowl, along with the 1/2-3/4 tsp of coconut extract and coconut flakes.
- Mix these together and then place into your coffee strainer or filter.
- Brew the coffee. Smell the coconut.
- You can stop here and use your normal creamer, or you can continue below with how I enjoy mine!
- While brewing, heat up your coconut milk in the microwave for about 1 min and 30 seconds. It will be hot.
- Spray some coconut whipped cream in the heated milk and either use a frother or a spoon to mix it up!
- Pour into your coffee, you milk should hopefully be fluffy enough to float at the top like a latte!
- Place your stencil over the fluffy milk, and then sprinkle cinnamon over.
- Enjoy!
