Remember when we were young, and how exciting it was to eat DIRT in grade school? I’d get so excited for that fast little treat of chocolate pudding and crumbled Oreos. Since Little B isn’t in school just yet, I thought I’d recreate dirt, in a bit of a more healthy way.
Don’t worry, you can still enjoy the yummy, buttery taste of a pancake in this if you’d like. We added in the Trader Joe’s pancake bread to make this more of a dessert.
These mini terrariums turn out so pretty, I feel like this would be an awesome idea for any celebration as they look so chic.

First, you want that “sand” layer,
We took a big spoonful of that pancake bread and smashed it down in the cup. Just a guilt free taste of cake as we see it 🙂
For the brown dirt ,
Instead of the chocolate pudding part, obv feel free to add that instead, we used chocolate yogurt. This one is all up to you! If you’re like me and prefer coconut milk yogurt, mix in some cocoa powder to turn it brown! If you like regular Greek yogurt, add cocoa powder (about 2 tbsp) to 1 cup yogurt. So easy.
The top layer should look like soil. We used chocolate hazlenut biscotti from Trader Joe’s because it is both dark brown in color and includes hazelnuts that added more texture. In a food processor, process 2 of these small cookies until you have fun crumbles.

If you do need to refrigerate these, then add the herbs after you take them out or they will flop and shrivel in the cold.
The fun part,
Next you’ll want to add more texture to the top!
If you chop up white chocolate morsels, you’ll get a pebble look-a-like. If you really want a rocky look though, feel free to take on the challenge to find those actual chocolate rocks!
For the green moss effect, you can find some green powdered sugar in your local craft store. Our local store is Michael’s, and we found this in the baking decor section. You could also use matcha powder if you want that earthy taste.
Finally, two very succulent looking herbs we used are sage and dill. Use the stem to stand them in your fresh dirt. These are mostly for a look, so when you take these herbs out before eating your dirt, wash them off and leave them aside for your dinner plate tonight. They also pair well with roasted potatoes.
It’s a great day to build a mini terrarium. These refrigerate very well, too.
