Fall is ending sooner than we think, and quite honestly a lot has happened over here in good ways.. and I hope the same for you. Losing track of time is quite easy anymore. Ya know, mom duties, and then life duties. Thankfully I get out for work to break up the week! But keeping busy is one way we are passing the time.
And then keeping in touch with our family and friends takes time, too. We are so thankful we get to see them very frequently.
Sidenote: Also friend’s with kids, where was our head’s up from all of you that toddlers are wild! I mean, I love every bit of it, but WOW. Every single parent out there just needs a hug, as well as our own parents. I say this because children are so accident prone and so delicate and so stinking cute that.. well parents know what I’m trying to say. For those of you who have to home school and work from home, seriously- hugs!
One thing that is help getting me by is scrolling the internet lol! and then reading fun things to spruce up our home for the holiday season. There is this book that is called “There’s No Such Thing As Bad Weather.” Lately, we have been trying to live to this rule:
There is also (!!!) This book “The Little Book of Hygge.” These two reads I keep coming back to at a time like this with being “stuck” at home and honestly it is nice for new parents out there because we would be “stuck at home” anyway. If you are a homebody like me, I think you’ll appreciate these reads!
These books bring me to: hygge (hoo-gah). One of ways to be hygge is by having a treat. This can be coffee, a latte, a sweet, whatever it is that you love and gives you the warm and cozies in your belly. If you read the book it will make more sense. For me, I love my coffee. For you, you may love a hot croissant with hot chocolate or a freshly baked cookie. Or a fresh batch of homemade potato chips.
Then! Where it gets more interesting, hygge could also be under the home decor category. What makes it hygge is that any decor has to be that of nature. So as you’ll see, we spray painted branches white and turned it into a cute festive winter tree with fairy lights for the winter. So hygge and super cozy.

Rosey Apple Puff Pastries
I found these on pinterest, and I honestly would love to know where this idea originated from because it’s so genius I want to give credit. I kept seeing the same concept of red apple slices used to look like roses, but I feel like everyone’s prep for this was different. So here is my take (and it was easy):
- Pastry puff sheets (if you accidentally get the shells like me, you can just re-roll the dough out. it’s okay)
- Red apples of your liking. I only used one for this dish.
- 1 half lemon
- A small baking pan depending on how many roses you want to make
- Avocado oil (or any oil) to wash onto the dough to make the following stick:
- Cinnamon sugar, sprinkled to your liking
- Coconut flakes would have been divine, but not necessary
How to create this dish:
- The first step is to make sure your pastry sheets are thawed and flexible to work with!
- Then, wash your apples, core them, and slice them realllly thin.
- You can slice them carefully with a sharp knife, or if you have a vegetable slicer use that. The thinner the slice the better.
- Heat up on Lo heat (with 1 tbsp lemon squeeze) enough water to cover your apple slices.
- This is to warm them to make them bendable, and also the citric acid keeps the apples from browning.
- Cook the apples for about 10 minutes or until soft.
- Strain apple slices and then set on a paper towel to dry them as much as you can.
- Work with your pastry sheet and roll it out so that it’s flat.
- If you somehow don’t have a roller, then it’s okay to use your hands! Just flour the surface you’re working on and flour your hands so that the dough doesn’t stick to you!
- Make 1.5 inches height x 7 inches long patches of pastry sheet.
- Brush the sheets with a little bit of butter or oil, and then sprinkle cinnamon sugar all over. This is also a good time to sprinkle on coconut flakes!
- Place apples so that half of the slice is showing over the pastry sheet.
- Roll them up! And place them in a small dish!
- It gets messy and that’s the fun of it.
- Cook on 400 degrees F until the pastry is golden brown.
- Let set, sprinkle confectioner’s sugar, and ENJOY!
Enjoy these with a nice scoop of vanilla bean ice cream, or a lovely coffee. What’s cute is, if you pick the roses one-by-one they then become bite size to enjoy through the day :). Happy Thanksgiving!
