Who loves peanut butter! me. Who loves biscotti! me. Who loves Perfect Bar! OMG ME.
If you’ve never tried Perfect Bar, they’re well, perfect! I was told by a close friend, wink, that the Perfect Bar recipe was made literally in his kitchen, and now you see it everywhere! Starbucks, Grocery Stores, Target! How cool is that! Their ingredients are so clean and fresh. You can taste the quality. I am forever a fan of Perfect Bar. So is my child. He can eat as many as he wants.
Lately, I have been craving a peanut butter cookie crunch. And then I thought it would be good to try some type of peanut butter biscotti. A great little treat for morning, noon, or night. Instead of adding plain old peanut butter, I added one Peanut Butter Chocolate Chip Perfect Bar. It’s already sweetened with honey and it has great ingredients so why not? Plus, we add our #support to some great people with a great outlook on being healthy and whole. These bars can be eaten plain and are so freakin delicious, but I thought this would be fun to make into biscotti!
Look at these ingredients (taken from this site):
INGREDIENTS: Peanut Butter*, Honey*, Nonfat Dry Milk*, Dark Chocolate*† (Chocolate*, Cane Sugar*, Cocoa Butter*, Sunflower Lecithin), Dried Whole Egg Powder*, Rice Protein*, Sea Salt, Sunflower Lecithin*, Dried Whole Food Powders (Kale*, Flax Seed*, Rose Hip*, Orange*, Lemon*, Papaya*, Tomato*, Apple*, Alfalfa*, Celery*, Kelp*, Dulse*, Carrot*, Spinach*), Flax Seed Oil*, Sunflower Oil*, Sesame Seed Oil*, Olive Oil*, Pumpkin Seed Oil*.

What you need:
- Two bowls, or 1 ninja food processor
- Parchment Paper
- Baking Sheet
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup unsweetened coconut flakes (can omit if you don’t like this. you can substitute nuts if you want. Or omit this step altogether and add in another 1/4 cup almond flour)
- 1/8 cup coconut sugar
- 1/8 cup honey
- 1 Peanut Butter Chocolate Chip Perfect Bar
- 1 tsp coconut extract, vanilla extract, OR almond extract. I used coconut.
- 2 egg whites
- 1 tsp baking powder
- 1 tbsp olive oil (or any oil: canola, coconut are good)
- Set aside Extra honey for Drizzle, or Peanut Butter to Spread.

Directions:
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- Mix all of your dry ingredients together in ninja.
- If you do not have a ninja, then chop up your Perfect Bar very finely with a knife and then mix your dry ingredients into a mixing bowl.
- In another bowl, mix the wet ingredients.
- Then combine them all and mix softly. You almost want the dough to be dry. It should stick together almost like a slightly dried out play dough.
- If the dough is super sticky add in some more coconut flakes or almond flour. If it’s so dry that it’s crumbling, add some more olive oil.
- Form dough into a log as seen above.
- Bake for about 21 minutes. You want it to be the slightest golden brown when done.
- Let cool.
- Slice the cooled down dough into about 14 pieces.
- Place each piece carefully back onto parchment paper and drizzle with honey.
- Bake for another 15 minutes OR until golden brown!
- Let cool and ENJOY!
