What a way to warm your rainy and cold day with a tasty dessert that includes apples, peanut butter, and puff pastry. Peanut butter is my weakness! Well, any kind of nut butter. Puff pastry always is a treat, especially with a nice cup of hot tea or coffee. This pastry turned out to be so warmly delicious, and it will make your home smell wonderful. We had fun putting this together, too! I would say this is easy to do if you have an hour to spare.
Why we chose to make this today: 1) I was scrolling on @zoebakes instragram admiring her photos. She makes this Wood Fired Apple Gallette that looked to die for. So what we made was our own version of that. I loved how hers looked and the simplicity of it! There is a virtual Anthropologie event Saturday 12-3 that she will be featured on btw! 2) I made my usual morning latte and clear as day, there was an oatmilk foam apple floating. It was just meant to be 😀 .
Though I would have loved to make the puff pastry from scratch, we ended up using one Pepperidge Farms Puff Pastry Sheet from our local grocery store. The package comes frozen, so you do have to thaw it for about 40 minutes or so before you begin. Also, the trick to using puff pastry is by keeping it as cold as you can, it’s a fine line. You don’t want it thawed too much because you will then lose the delicateness of the flakiness!
A tool I highly, highly recommend using to slice your apples is a Mandoline Slicer (click here to shop it on Amazon Prime). This tool is great to have to slice the apples quickly. Otherwise, you’ll have to slice apples with a sharp knife and it is a bit more time consuming. Trust me, it’s been tried. If the apple slices are thin enough, this will bake nicely in the oven.

in the photos below. All you have to do is
- Slice 2 apples with the Mandoline slicer and wash those slices quick with some lemon water to prevent browning.
- Then, roll your pastry sheet out into a square (with extra flour applied).
- Place a layer of your choice peanut butter in the middle of the square, sprinkle on some cinnamon sugar or nut pieces if you’d like.
- Layer the apples as shown.
- Fold up the edges of the dough.
- Use egg wash over top (1 egg yolk, splash of milk, pinch of salt) for a glazy top.
- Bake at 400 degrees F for about 25-30 minutes or until crispy and golden brown.
