We have been busy lately, and I have been wanting to post this FUN and light Fruity Pebble French Toast recipe! It has been so long since I’ve had such a Fruity Treat, myself. Beckham likes eating fruity pebbles one by one and then really enjoys throwing them on the ground when he is done. Either way it’s a colorful mess and makes any morning, or dinner, a delight.
This recipe pairs very well with the affogato, just sayin’.
What inspired this was a TV Commercial about Fruit Pebbles French Toast made in the city. And then, coincidentally, my dad bought Beckham a box of Fruity Pebbles. Right now, we can’t get to the city because it’s such a drive from us, and everything was still take-out only. So, I made us our own recipe! Really, not rocket science.

- I love “healthy” desserts – I incorporated a lighter ingredient list to this (egg-whites, coconut milk, Light Oatmeal Bread, etc).
If you love those three things, too, then today is your day to make these! Great for a pick me up, a bedtime snack, your kids, your honey, or for you overnight workers who need that comfort food taste 🙂
Ingredients:
- 1/4 cup of milk (any kind, dairy or non-dairy) I do prefer whole-fat Vitamin D milk.
- 1 egg plus 1/2 cup egg-whites.
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- 1 1/2 tsp orange zest
- 1/8 cup butter
- 6 slices of bread, Pepperidge Farms Light Oatmeal Bread was a great option for this.
- A plate full of Fruity Pebbles, probably about 2 cups worth.
- Whipped cream and Sprinkles to add on later
Directions:
- In a bowl beat milk, eggs, vanilla extract, cinnamon, orange zest together. Let sit.
- In a frying pan, let heat on medium heat and place butter in pan to melt. If it starts to burn or bubble then turn the heat down just a tad. You want a slow fry to this French Toast so that it doesn’t burn.
- Also, heat the oven on 400 degrees F. Grease an oven pan and set aside, or use parchment paper.
- On a plate place 1 cup full of Fruity Pebbles on top.
- Dip bread slices in one by one and coat with the Fruity Pebbles.
- Once both sides of the bread are coated, place carefully into frying pan.
- Let cook until golden brown on each side, for about 3 mins each side.
- Once each slice of bread is golden brown on each side, transfer all to a baking sheet.
- Bake for another 5-10 minutes just to be sure that the egg is cooked thoroughly.
- Add some Whipped Cream of your choice and some sprinkles for fun!
