Banana Waffles
We had such delicious banana pancakes at the beach last week, so now I have been wanting to make them in the mini waffle maker! I show that thing off on social media (probably too much, sorry). The mini waffle maker is so easy to use, and the size of the waffles are perfect for both me and my buddy. You can click here to see the one we use. It weighs just about a pound. I let Beckham sit in his high chair next to the counter because he likes to watch them being made as he plays with his cars.
Making breakfast and lattes at home have been so fun, lately. I will run here or there to a coffee shop just to get a takeout latte, but they aren’t as fun without the latte art. Is it weird to request, “Hi, I’d like my latte with art on it please?”
The recipe that we do use for these waffles is quite simple. I use the brand Kodiak Cakes Pancake Mix – Chocolate Chip. This brand can be found at most grocery stores, or if you like amazon you can shop them here. Just follow the directions on the back.

The pancake mix is a 1:1 ratio of mix and milk (or water). We mix:
- 1/2 cup of mix
- 1/2 cup of milk
- 1 egg
- Mix that all up then add in about 1/2 banana
Then the fun part when the waffles are pressed.. adding toppings. Our go to’s are:
- Coconut whipped cream
- rainbow sprinkles
- ground cinnamon
- the other half of the banana, chopped
Easy peasy! And if you want to add in other fruits, go for it. We love adding in blueberries, too 🙂
Our day out after breakfast…
The city of West Chester is just so cute, and it is where I started college as a youngin’ and then finished my degree in Nursing in my later twenties. The weather has been perfect, so it was time to take Beckham out to start seeing the world again. He is a definite nosy body and people watcher. He is also adventurous so he doesn’t mind the drive.
Our purpose was to get gelato, but they weren’t open in time for us arriving. Not even after our long walk along the busy streets. The cars vrooming by was enough of a treat, though, for the little one.
Letting Beckham see these streets today was special. Those days back when I was a freshman were very hard for many reasons. The unknowing of what the future held and indecisiveness of my future goals were just the tip of it all. Walking the streets now as happy and fulfilled as I am today, I wish I could tell the young Krystle that it all was going to work itself out. So, instead I’ll tell little Beckham… and I’ll keeping reminding him.
